June 4, 2017 - This Week's Meal Prep Session!



So I have to admit it. This week I was not at all motivated to do meal prep. We went to the pool in the early afternoon and after taking a shower I felt so drained form being out in the sun for two and half hours. Still, I powered through it knowing how frazzled I'll be during the week when nothing is ready. Not to mention how guilty I feel when I have to go out and buy lunch. The guilt comes from not always making healthy decisions and spending more money than if I had made lunch ahead of time.

Thankfully the meals I had planned were very quick and easy to make. Rotisserie chicken for the win! I used it in  a Garlic Chicken & Kale Spaghetti dish as well as a Asian Chicken Chopped Salad. For the chopped salad, I didn't add the dressing. I made it and saved for when we will be eating it this way it;s not soggy by then. Then I went on a made a kid favorite and made the turkey and sweet potato burgers. Then I felt that the dishes were too poultry heavy so  I made the blackened tilapia, another kid favorite. 

For lunch I roasted some sweet potatoes, steamed veggies, and grilled chicken.
