Beans and rice


Ingredients

  • 1 tbsps olive oil
  • 1 onion, chopped
  • 1 lb lean ground beef
  • 2 (15oz) cans kidney beans, drained and rinsed
  • 2 C tomato sauce
  • 1 tsp smoked paprika
  • 3/4 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Heat oil in a large pot over medium heat. Cook onion, stirring until softened, about 5 minutes. 
  2. Add ground beef and cook, stirring and breaking up the meat with a wooden spoon, until the meat is browned, about 7 minutes.
  3. Add beans, tomato sauce, and spices. Bring to a boil, reduce heat and let simmer for 10 minutes.
  4. Serve over rice. Makes 8 servings
